Ingredients

  • 1 Package Simply Potatoes Shredded Hash Browns
  • 1 Tablespoon butter melted
  • 1 egg
  • 1/8 Teaspoon onion powder
  • 1/8 Teaspoon garlic powder
  • 1/8 Teaspoon Italian Seasoning
  • Salt to taste
  • Black pepper to taste
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 1/4 Cup onion diced
  • 1 clove garlic minced
  • 1 Cup and 2 Tablespoons Bob Evans 100% Liquid Egg Whites – 16 Ounces
  • 1 1/2 Cups gruyere cheese shredded
  • 1/4 Cup spinach
  • 1/2 Cup ham diced

Instructions

  1. Preheat oven to 400 F. Grease muffin tin and set aside.
  2. Combine Simply Potatoes Shredded Hash Browns, melted butter, egg, onion powder, garlic powder, Italian seasoning, salt and pepper in a bowl.
  3. Line muffin tin with the hash browns, pushing them up along the sides. Bake for 25 minutes or until hash browns begin to crisp.
  4. In a small pan, over medium-low heat, add oil and sauté the onions, peppers, and garlic for 8-10 minutes or until soft.
  5. Add the spinach and cook until wilted. Set aside to cool.
  6. In a bowl, combine Bob Evans 100% Liquid Egg Whites, milk, cheese, and ham. Add salt and pepper to taste. Set aside.
  7. Divide cooled vegetable mixture equally to muffin cups.
  8. Carefully divide egg mixture equally between muffin cups.
  9. Bake for 15-20 minutes or until egg is set.
