Ingredients

  • 2 Pound ground beef
  • 10 Ounces frozen chopped onion
  • 1 Ounce taco seasoning mix
  • 10 Ounces enchilada sauce
  • 8.5 Ounces cornbread muffin mix
  • 1 Cup shredded Cheddar cheese
  • ¾ Cup milk
  • ¼ Cup Bob Evans 100% Liquid Egg Whites – 16 Ounces
  • 8 OUnces sour cream

Instructions

  1. Preheat oven to 400°F.
  2. Cook beef and onion in a large skillet until beef is browned; drain and return to skillet.
  3. Stir in seasoning mix and enchilada sauce; cook until thickened.
  4. Stir together muffin mix, cheese, milk, and egg white.
  5. Dollop and spread over beef mixture.
  6. Bake 20 minutes or until cornbread is set.
  7. Serve with sour cream.
