Ingredients

  • 1 Pound lean ground beef
  • 1 onion diced
  • 1 Packet low sodium taco seasoning mix
  • 1/3 Cup water
  • 1 1/2 Cups frozen corn
  • 1 1/2 Cups red or green bell pepper diced
  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 1 Cup cheddar cheese

Instructions

  1. Preheat oven to 350 F and grease a casserole dish.
  2. Brown ground beef and onion and drain any fat once beef is cooked.
  3. Add taco seasoning mix, water, corn, bell pepper and cook until peppers are tender.
  4. Pour into greased casserole dish. Top with Bob Evans Original Mashed Potatoes and cheese.
  5. Bake at 350 F for 30-35 minutes or until heated through.
