Ingredients

  • 1 Pound Owens Hot Pork Sausage
  • 1/2 Cup onion diced
  • 1 red bell pepper diced
  • 1 jalapeño pepper seeded and diced
  • 1 garlic diced
  • 14.5 Ounces canned diced tomatoes drained
  • 2 Cups white rice
  • 1 Package low sodium taco seasoning
  • 2 1/2 Cups low sodium chicken broth

Ideas for toppings: salsa, guacamole, cheese, sour cream, fresh cilantro, black beans, sweet corn

Instructions

  1. In a large saucepan, add sausage and crumble over medium heat until fully cooked, about 5 minutes.
  2. Add onion and peppers continue to cook until onions are translucent and peppers are tender.
  3. Add garlic to the pan and sauté 30 seconds or until garlic becomes fragrant.
  4. Add diced tomatoes, rice and taco seasoning. Stir to incorporate.
  5. Add chicken broth and bring to a boil. Cover. Reduce heat and simmer for about 15 minutes until the rice is tender and the liquid is absorbed.
  6. Place bowls of toppings for guests to add the toppings of their choice.
