Ingredients

  • 4 Ounces diced pancetta
  • 1 Tablespoon olive oil
  • 20 Ounces Bob Evans Macaroni & Cheese
  • 1½ Cups shredded Gruyere cheese
  • 1 Cups truffle oil
  • 2 Tablespoons butter
  • ½ Cup panko breadcrumbs
  • 1 Clove garlic minced

Instructions

  1. Preheat oven to 350°F.
  2. Cook pancetta in hot olive oil in a large skillet over medium heat until crisp; drain on paper towels.
  3. Spoon macaroni and cheese into a large bowl.
  4. Add crispy pancetta, Gruyere cheese, and truffle oil, stirring until blended.
  5. Spoon mixture into a lightly greased 2-quart baking dish.
  6. Meanwhile, melt butter in a small bowl; add breadcrumbs and garlic.
  7. Toss until well coated.
  8. Sprinkle over macaroni and cheese.
  9. Bake 25 to 30 minutes or until hot and bubbly and breadcrumbs are golden brown.
