Beer Cheese and Sausage Dip

Ingredients
- 32 Ounces Owens Hot Pork Sausage
- 1 Cup IPA beer
- 8 Ounces cream cheese
- 8 Ounces havarti cheese shredded
- 1 Cup shredded Cheddar cheese
- ½ Cup sour cream
- 4 Ounces diced green chiles
- 3 Green onions chopped
- 1 Tablespoon stone ground mustard
- 11 Ounces tortilla chips

- Preheat oven to 400°F. Cook sausage in a large skillet over medium heat until browned and crumbly; drain, and return to pan.
- Stir in beer, and simmer until reduced by half. Add cream cheese, stirring until blended.
- Gradually add shredded cheeses, stirring until melted.
- Stir in sour cream, green chiles, green onions, and mustard.
- Spoon into a lightly greased 2-quart baking dish.
- Bake 25 to 30 minutes or until hot and bubbly. Serve with tortilla chips.
Note: Garnish with sliced green onions, if on hand.
