Ingredients

  • 32 Ounces Owens Hot Pork Sausage
  • 1 Cup IPA beer
  • 8 Ounces cream cheese
  • 8 Ounces havarti cheese shredded
  • 1 Cup shredded Cheddar cheese
  • ½ Cup sour cream
  • 4 Ounces diced green chiles
  • 3 Green onions chopped
  • 1 Tablespoon stone ground mustard
  • 11 Ounces tortilla chips

Instructions

  1. Preheat oven to 400°F. Cook sausage in a large skillet over medium heat until browned and crumbly; drain, and return to pan.
  2. Stir in beer, and simmer until reduced by half. Add cream cheese, stirring until blended.
  3. Gradually add shredded cheeses, stirring until melted.
  4. Stir in sour cream, green chiles, green onions, and mustard.
  5. Spoon into a lightly greased 2-quart baking dish.
  6. Bake 25 to 30 minutes or until hot and bubbly. Serve with tortilla chips.

Note: Garnish with sliced green onions, if on hand.
