Cajun Macaroni & Cheese Fritters

Ingredients

  • 12 Ounces andouille sausage finely chopped
  • 4 Green onions diced
  • ½ Cup diced red bell pepper
  • 2 Cloves garlic minced
  • 1 Tablespoon olive oil
  • 20 Ounces Bob Evans Macaroni & Cheese
  • 2 Teaspoons Creole seasoning
  • 3 Large eggs divided
  • 2½ Cups panko breadcrumbs divided
  • ½ Cup all purpose flour
  • 48 Ounces bottle vegetable oil
  • 10.5 Ounces bottle remoulade sauce

Instructions

  1. Cook sausage, onions, bell pepper, and garlic in 1 Tbsp hot oil in a large skillet over medium heat until sausage is browned and vegetables are tender.
  2. Spoon into a large bowl. Stir in macaroni and cheese, Creole seasoning, 1 egg, and 1½ cups breadcrumbs.
  3. Cover, and refrigerate at least 4 hours or up to 2 days.
  4. Form macaroni & cheese mixture into 2-inch balls.
  5. Lightly beat 2 eggs in a shallow dish. Place remaining breadcrumbs in a shallow dish, and place flour in a third shallow dish.
  6. Dredge macaroni & cheese fritters in flour. Dip in beaten egg, letting excess drip off. Dredge in breadcrumbs to coat.
  7. Meanwhile, pour oil to a depth of 4 inches in a large saucepan. Heat over medium heat to 360°F.
  8. Fry fritters 5 to 6 minutes or until golden brown. Drain on a wire rack set over paper towels. Serve with remoulade sauce, for dipping.

Note: Garnish with fresh thyme leaves, if desired.
