Hot Chicken Mashed Potato Balls

Ingredients
- 24 Ounces Bob Evans Original Mashed Potatoes
- 3 Cups shredded rotisserie chicken
- 1 Cup shredded Cheddar cheese
- 2 Tablespoons packed brown sugar
- 1 Teaspoon smoked paprika
- 1 Teaspoon garlic powder
- ¼ Teaspoon cayenne pepper
- 2 Large eggs lightly beaten
- 1½ Cups panko breadcrumbs
- 48 Ounces bottle vegetable oil
- ½ Cup hot honey

- Stir together mashed potatoes, chicken, cheese, brown sugar, paprika, garlic powder, and pepper until blended.
- Add eggs, stirring until combined. Roll potato mixture into 1½-inch balls.
- Place breadcrumbs in a shallow dish; dredge potato balls in breadcrumbs to coat.
- Meanwhile, pour oil to a depth of 4 inches in a large saucepan.
- Heat over medium heat to 360°F. Fry potato balls 5 to 6 minutes or until golden brown.
- Drain on a wire rack set over paper towels. Drizzle with hot honey before serving.
