Ingredients

  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 3 Cups shredded rotisserie chicken
  • 1 Cup shredded Cheddar cheese
  • 2 Tablespoons packed brown sugar
  • 1 Teaspoon smoked paprika
  • 1 Teaspoon garlic powder
  • ¼ Teaspoon cayenne pepper
  • 2 Large eggs lightly beaten
  • 1½ Cups panko breadcrumbs
  • 48 Ounces bottle vegetable oil
  • ½ Cup hot honey

Instructions

  1. Stir together mashed potatoes, chicken, cheese, brown sugar, paprika, garlic powder, and pepper until blended.
  2. Add eggs, stirring until combined. Roll potato mixture into 1½-inch balls.
  3. Place breadcrumbs in a shallow dish; dredge potato balls in breadcrumbs to coat.
  4. Meanwhile, pour oil to a depth of 4 inches in a large saucepan.
  5. Heat over medium heat to 360°F. Fry potato balls 5 to 6 minutes or until golden brown.
  6. Drain on a wire rack set over paper towels. Drizzle with hot honey before serving.
