Ingredients
- 6 Frozen buttermilk biscuits
- 1 Pound Owens Original Pork Sausage Roll
- 1 Cup diced onion
- 1 Cup diced red bell pepper
- 20 Ounces Bob Evans Macaroni & Cheese
- 6 Large eggs
- 1 Cup shredded pepper Jack cheese
- 1 Cup shredded Colby Jack cheese
- 2 Tablespoons minced fresh chives

- Preheat oven to 375°F. Bake biscuits according to package directions.
- Meanwhile, cook sausage, onion, and bell pepper in a large skillet over medium heat until sausage is browned and crumbly; drain if needed, and spoon into a large bowl.
- Add macaroni & cheese, stirring until blended. Spoon mixture into a lightly greased 9x13-inch baking dish.
- Lightly beat eggs in a large bowl. Crumble biscuits into eggs, stirring just until moistened.
- Stir in cheeses. Pour mixture over macaroni & cheese mixture. Bake 25 to 30 minutes or until center is set.
- Sprinkle with chives.
