Ingredients

  • 2 Onions
  • 2 Tablespoons butter
  • 20 Ounces Simply Potatoes Diced Potatoes
  • 1 Green bell pepper chopped
  • 1 Red bell pepper chopped
  • 4 Tablespoons olive oil divided
  • 1½ Pound salmon fillet
  • 8 Ounces container crème fraîche
  • ¼ Cup fresh dill sprigs

Instructions

  1. Preheat oven to 375°F. Toss together potatoes, bell peppers, and 3 Tbsp oil on a large rimmed baking sheet.
  2. Spread in a single layer and bake 25 to 30 minutes or until potatoes are browned and tender.
  3. Place fish on a second lightly greased baking sheet. Brush with 1 Tbsp oil and season with salt and pepper, if desired.
  4. Bake 10 to 15 minutes or until fish flakes with a fork. Meanwhile, melt 2 Tbsp butter in a large skillet over medium heat.
  5. Add onions; cover and cook 15 minutes or until tender. Uncover, and increase heat to medium-high.
  6. Cook, stirring constantly, until onions are golden brown. Remove from skillet, and set aside.
  7. Toss together potato mixture and caramelized onions.
  8. Flake salmon into large pieces and add to potato mixture; gently toss. Divide mixture among 6 bowls and top with crème fraîche.
  9. Sprinkle with dill.
