Salmon and Potato Hash
A hearty, flavorful skillet dish that combines tender chunks of potato with rich, flaky salmon and a medley of savory seasonings. Perfect for breakfast, brunch, or a quick weeknight dinner, this hash is comfort food with a gourmet twist.
Ingredients
- 2 Onions
- 2 Tablespoons butter
- 20 Ounces Simply Potatoes Diced Potatoes
- 1 Green bell pepper chopped
- 1 Red bell pepper chopped
- 4 Tablespoons olive oil divided
- 1½ Pound salmon fillet
- 8 Ounces container crème fraîche
- ¼ Cup fresh dill sprigs

- Preheat oven to 375°F. Toss together potatoes, bell peppers, and 3 Tbsp oil on a large rimmed baking sheet.
- Spread in a single layer and bake 25 to 30 minutes or until potatoes are browned and tender.
- Place fish on a second lightly greased baking sheet. Brush with 1 Tbsp oil and season with salt and pepper, if desired.
- Bake 10 to 15 minutes or until fish flakes with a fork. Meanwhile, melt 2 Tbsp butter in a large skillet over medium heat.
- Add onions; cover and cook 15 minutes or until tender. Uncover, and increase heat to medium-high.
- Cook, stirring constantly, until onions are golden brown. Remove from skillet, and set aside.
- Toss together potato mixture and caramelized onions.
- Flake salmon into large pieces and add to potato mixture; gently toss. Divide mixture among 6 bowls and top with crème fraîche.
- Sprinkle with dill.
