Apple Butter French Toast and Sausage Bake
Layers of brioche, apple butter, sausage, cream cheese, and cheddar are baked into a rich overnight casserole topped with a crunchy cinnamon pecan streusel. A cozy breakfast bake bursting with fall and holiday flavors.
Ingredients
- 1 Loaf Brioche cubed and toasted
- 4 Ounces cream cheese cut into small cubes
- ¾ Cup apple butter
- 12 Ounces Bob Evans Original Pork Sausage Patties cooked and quartered
- 1½ Cups shredded sharp white Cheddar cheese
- 8 Large eggs
- 2 Cups whole milk
- 1 Cup heavy cream
- ¼ Cup maple syrup
- 2 Teaspoons vanilla extract
- 2½ Teaspoons ground cinnamon divided
- 1 Teaspoon kosher salt
- ¼ Teaspoon ground nutmeg
- ¾ Cup all purpose flour
- ½ Cup chopped pecans
- ⅓ Cup packed brown sugar
- 6 Tablespoons melted butter

- Lightly grease a 13 x 9-inch baking dish. Spread half of brioche cubes in dish.
- Scatter half of cream cheese over bread. Dollop half of apple butter over cream cheese, top with half of sausage, and half of cheese. Repeat layers.
- Lightly beat eggs, milk, cream, syrup, vanilla, 2 teaspoons cinnamon, salt, and nutmeg. Slowly pour over bread mixture.
- Cover, and refrigerate overnight. Let casserole stand at room temperature for 1 hour.
- Preheat oven to 350°F. Bake for 35 minutes. Meanwhile, stir together flour, pecans, brown sugar, and ½ teaspoon cinnamon in a small bowl.
- Add melted butter, stirring until combined. Sprinkle streusel over casserole.
- Bake 25 to 35 minutes longer or until center is set, covering casserole with foil to prevent excess browning, if necessary..
