  • 1 Tablespoon vegetable oil
  • 1/2 Cup onion chopped
  • 1/2 Cup bell pepper chopped
  • 1/2 Teaspoon minced garlic
  • 20 Ounces Bob Evans Macaroni & Cheese
  • 2 Cups rotisserie chicken shredded
  • 1 1/2 Cups Pepper Jack cheese shredded
  • 3/4 Teaspoon chili powder
  • 3/4 Teaspoon cumin
  • 1/4 Teaspoon black pepper
  • Salsa for dipping
  • Sour cream for dipping


  1. Preheat oven to 375 F. Spray an 8x8 baking dish with non-stick spray. Set aside.
  2. In a large skillet, heat 1 tablespoon of vegetable oil and add the chopped onions, bell pepper and garlic. Sauté for 5 minutes.
  3. In a large mixing bowl, combine together all ingredients, reserving 1/2 cup pepper jack.
  4. Pour mixture into prepared baking dish. Top with remaining 1/2 cup pepper jack cheese.
  5. Bake for 25-30 minutes. Carefully remove from oven and allow to cool for 5 minutes before serving. Serve with sour cream and salsa.
