Spray an 8x8 baking dish with non-stick spray. Set aside.
In a large skillet, heat 1 Tbsp. of vegetable oil and add the chopped onions, bell pepper and garlic. Sauté for 5 minutes.
In a large mixing bowl, combine together all ingredients, reserving ½ c. pepper jack.
Pour into prepared baking dish.
Top with remaining ½ c. pepper jack cheese.
Bake for 25-30 minutes.
Carefully remove from oven and allow to cool for 5 minutes before serving.
Serve with sour cream and salsa.
