Chicken Fajita Macaroni and Cheese

  • 1 pkg. Bob Evans Macaroni and Cheese
  • 2 cups shredded rotisserie chicken
  • 1 1/2 cups shredded Pepper Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 tablespoon vegetable oil
  • 3/4 teaspoon chili powder
  • 3/4 teaspoon cumin
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon black pepper
  • Salsa, for dipping
  • Sour cream, for dipping
Chicken Fajita Macaroni and Cheese


  1. Preheat oven to 375 F.
  2. Spray an 8x8 baking dish with non-stick spray. Set aside.
  3. In a large skillet, heat 1 Tbsp. of vegetable oil and add the chopped onions, bell pepper and garlic. Sauté for 5 minutes.
  4. In a large mixing bowl, combine together all ingredients, reserving ½ c. pepper jack.
  5. Pour into prepared baking dish.
  6. Top with remaining ½ c. pepper jack cheese.
  7. Bake for 25-30 minutes.
  8. Carefully remove from oven and allow to cool for 5 minutes before serving.
  9. Serve with sour cream and salsa.
