Ingredients

  • 20 Ounces Simply Potatoes Signature Seasoned Diced Potatoes
  • 2 Tablespoons olive oil
  • 1 Lemon zested and juiced
  • 1 Shallot diced
  • 1 Tablespoon minced fresh parsley
  • 1 Tablespoon minced fresh chives
  • 1 Tablespoon minced fresh basil
  • 2 Teaspoons Dijon mustard
  • ¼ Cup olive oil
  • 8 Ounces thin green beans

Instructions

  1. Preheat oven to 400°F.
  2. Toss together potatoes and the 2 tablespoons of olive oil on a large rimmed baking sheet.
  3. Spread in a single layer.
  4. Bake 20 minutes or until potatoes are browned and tender.
  5. Meanwhile, grate zest and squeeze juice from lemon into a large bowl.
  6. Add shallot, and let stand 5 minutes.
  7. Add parsley, chives, basil, and mustard; whisk until blended.
  8. Gradually whisk in the ¼ cup olive oil until blended.
  9. Steam green beans according to package directions.
  10. Add potatoes and green beans to lemon mixture; toss.
  11. Season with salt and pepper, if desired.
  12. Enjoy!
