
Herbed Potato and Green Bean Toss
Fresh green beans and tender potatoes tossed in a fragrant herb blend make this a light, flavorful side that complements any main dish.
Ingredients
- 20 Ounces Simply Potatoes Signature Seasoned Diced Potatoes
- 2 Tablespoons olive oil
- 1 Lemon zested and juiced
- 1 Shallot diced
- 1 Tablespoon minced fresh parsley
- 1 Tablespoon minced fresh chives
- 1 Tablespoon minced fresh basil
- 2 Teaspoons Dijon mustard
- ¼ Cup olive oil
- 8 Ounces thin green beans

- Preheat oven to 400°F.
- Toss together potatoes and the 2 tablespoons of olive oil on a large rimmed baking sheet.
- Spread in a single layer.
- Bake 20 minutes or until potatoes are browned and tender.
- Meanwhile, grate zest and squeeze juice from lemon into a large bowl.
- Add shallot, and let stand 5 minutes.
- Add parsley, chives, basil, and mustard; whisk until blended.
- Gradually whisk in the ¼ cup olive oil until blended.
- Steam green beans according to package directions.
- Add potatoes and green beans to lemon mixture; toss.
- Season with salt and pepper, if desired.
