
Macaroni & Cheese Tacos
Tacos get the comfort food treatment with macaroni & cheese, spicy chorizo, and black beans. Wrapped in warm tortillas and topped with pico, this fusion meal is ready in under 30 minutes.
Ingredients
- 14 ounces Mexican chorizo
- 15 ounces canned black beans rinsed and drained
- 1 package Bob Evans Macaroni & Cheese
- 12 soft taco flour tortillas warmed
- 1 cup pico de gallo
- Cilantro leaves to garnish (optional)

- Cook chorizo in a large skillet over medium heat until chorizo is browned and crumbly; drain, and stir in beans. Cook until beans are throughly heated. Meanwhile, heat macaroni & cheese according to package directions.
- Spoon macaroni & cheese into warm tortillas. Top with chorizo mixture and pico de gallo. Serve immediately.
Note: Garnish with fresh cilantro leaves, if on hand.
