Tacos get the comfort food treatment with macaroni & cheese, spicy chorizo, and black beans. Wrapped in warm tortillas and topped with pico, this fusion meal is ready in under 30 minutes.

Ingredients

  • 14 ounces Mexican chorizo
  • 15 ounces canned black beans rinsed and drained
  • 1 package Bob Evans Macaroni & Cheese
  • 12 soft taco flour tortillas warmed
  • 1 cup pico de gallo
  • Cilantro leaves to garnish (optional)

Instructions

  1. Cook chorizo in a large skillet over medium heat until chorizo is browned and crumbly; drain, and stir in beans. Cook until beans are throughly heated. Meanwhile, heat macaroni & cheese according to package directions.
  2. Spoon macaroni & cheese into warm tortillas. Top with chorizo mixture and pico de gallo. Serve immediately.

Note: Garnish with fresh cilantro leaves, if on hand.
