Ingredients

  • 4 1/4 Cups all purpose flour divided
  • 0.25 Ounces active dry yeast
  • 1 Cup milk
  • 1 Cup Bob Evans Original Mashed Potatoes
  • 2/3 Cup + 2 Tablespoons butter softened and divided
  • 1 1/3 Cups sugar divided
  • 1 Teaspoon salt
  • 2 Large eggs lightly beaten
  • 3 Tablespoons orange zest divided
  • 4 Ounces cream cheese softened
  • 3 Tablespoons orange juice
  • 2 Cups powdered sugar

Instructions

  1. Combine 1½ cups flour and yeast in a large bowl; set aside.
  2. Combine milk, mashed potatoes, ⅓ cup butter, ⅓ cup sugar, and salt in a saucepan.
  3. Heat over medium-low heat until until warm (120°F to 130°F); add to flour mixture along with eggs. Beat with a mixer on low speed until blended. Beat on medium speed 3 minutes. Gradually add remaining flour, beating until a soft dough forms.
  4. Turn out dough onto a lightly floured surface; knead 4 minutes or until dough is smooth and elastic.
  5. Place dough in a lightly greased bowl, turning to grease top. Cover loosely, and let stand in a warm place (85°F) for 1 hour or until doubled in size.
  6. Meanwhile, stir together 1 cup sugar and 2 Tbsp orange zest in a bowl.
  7. Roll out dough into a 8- x 16-inch rectangle on a lightly floured surface. Spread ⅓ cup softened butter over dough; sprinkle with sugar mixture.
  8. Roll up dough, starting at one long side, jelly-roll style, pressing edges to seal. Cut into 12 even slices.
  9. Place rolls cut sides down in a lightly greased 13- x 9-inch baking pan. Cover loosely, and let stand in a warm place (85°F) for 1 hour or until doubled in size.
  10. Preheat oven to 375°F.
  11. Bake rolls 25 to 30 minutes or until golden brown.
  12. Meanwhile, beat cream cheese and 2 Tbsp butter with a mixer at medium-high speed until fluffy. Beat in 1 Tbsp orange zest and orange juice. Gradually beat in powdered sugar until smooth. Spread over warm rolls.
