Ingredients

  • 1 Cup Bob Evans Original Mashed Potatoes
  • 1 Tablespoon butter
  • 1 Cup sliced mushrooms coarsely chopped
  • ½ Cup finely chopped red bell pepper
  • 3 Green onions sliced
  • ½ Cup shredded Cheddar cheese
  • ½ Cup panko breadcrumbs
  • 1 Pork Loin
  • 12 Slices bacon

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add mushrooms, bell pepper, and green onion; cook, stirring occasionally, until vegetables are tender.
  3. Spoon into a bowl.
  4. Add mashed potatoes, cheese, and breadcrumbs, stirring until blended.
  5. Meanwhile, preheat oven to 400°F.
  6. Butterfly pork loin by making a lengthwise cut down center of one flat side, cutting to within 1 inch of other side; open pork like a book.
  7. Flatten pork to ½-inch-thickness using a meat mallet.
  8. Spread potato mixture over pork, leaving a ½-inch border on all sides.
  9. Roll up pork, starting with 1 long side.
  10. Arrange bacon slices side by side on a parchment paper lined rimmed baking sheet.
  11. Place pork, seam- side up, over bacon.
  12. Bring up sides of bacon around pork; flip pork over so seam sides are down.
  13. Bake 30 to 40 minutes or until a meat thermometer inserted in thickest portion registers 145°F and bacon is crisp.
  14. Let stand 10 minutes before slicing.
