- ½ Cup shredded Cheddar cheese
- ½ Cup panko breadcrumbs
- 1 Pork Loin
- 12 Slices bacon

- Melt butter in a large skillet over medium heat.
- Add mushrooms, bell pepper, and green onion; cook, stirring occasionally, until vegetables are tender.
- Spoon into a bowl.
- Add mashed potatoes, cheese, and breadcrumbs, stirring until blended.
- Meanwhile, preheat oven to 400°F.
- Butterfly pork loin by making a lengthwise cut down center of one flat side, cutting to within 1 inch of other side; open pork like a book.
- Flatten pork to ½-inch-thickness using a meat mallet.
- Spread potato mixture over pork, leaving a ½-inch border on all sides.
- Roll up pork, starting with 1 long side.
- Arrange bacon slices side by side on a parchment paper lined rimmed baking sheet.
- Place pork, seam- side up, over bacon.
- Bring up sides of bacon around pork; flip pork over so seam sides are down.
- Bake 30 to 40 minutes or until a meat thermometer inserted in thickest portion registers 145°F and bacon is crisp.
- Let stand 10 minutes before slicing.
