This easy mashed potato salad recipe is a delicious variation of the traditional potato salad with a huge time-saving shortcut! Served warm or cold, this ranch mashed potato salad will be a hit!


  • 2 (24 ounce) Bob Evans garlic mashed potatoes (about 5 cups)
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 (1 ounce) packet ranch seasoning and salad dressing mix
  • 2 cups shredded mild cheddar cheese
  • 1 1/2 cups cooked bacon, crumbled
  • 1 celery rib, fine diced
  • 2 scallions, sliced
Ranch Potato Salad


  1. Prepare mashed potatoes, according to package directions. Allow to cool.
  2. Combine mashed potatoes, sour cream, mayonnaise, and ranch dressing mix in a large bowl. Stir until well combined.
  3. Add cheese, bacon, celery, and scallions.
  4. Stir until combined. Cover and refrigerate until ready to serve.
  5. Potato salad is best after the flavors have had a chance to meld (at least 2 hours of chilling).
