Sloppy Joe Shepherd’s Pie

Ingredients

  • 1 pkg Bob Evans Original Mashed Potatoes
  • 1 and 1/2 lb Ground beef
  • 1/2 cup Sweet onion
  • 1 Green bell pepper, chopped
  • 1 tbsp Chives, chopped
  • 1 cup Frozen corn
  • 2 Carrots, chopped
  • 1 cup Cheddar cheese, grated
  • 3/4 cup Ketchup
  • 2 tbsp Yellow mustard
  • 2 tbsp Brown sugar
  • 1 tbsp White distilled vinegar
  • 1 tsp Worcestershire sauce
  • 1 tsp Salt
  • 1/2 tsp Ground pepper
Sloppy Joe Shepherd’s Pie

Instructions

  1. Finely dice the onion, pepper, and carrots. Set aside
  2. Heat a 12-inch oven safe skillet over medium heat and add the ground beef
  3. Crumble the beef as it begins to brown. When about half of the beef is browned, add the onion, pepper, and carrots to the skillet. Continue cooking until the beef is cooked through
  4. Drain the grease from the skillet
  5. In a separate bowl, whisk together the ketchup, mustard, brown sugar, vinegar, Worcestershire sauce, salt, and pepper. Pour this mixture into the skillet with the beef
  6. Cook over low heat, stirring occasionally for 15 minutes
  7. Add the corn to the mixture and stir
  8. In a separate bowl, add the mashed potatoes, grated cheese, and chives. Stir to combine
  9. Spread the mashed potatoes evenly over the sloppy joe mixture
  10. Place skillet in a preheated 350 degree oven and bake for 15 minutes.
  11. Serve immediately
