Ingredients

  • 12 Bob Evans Hot Pork Sausage Patties
  • 12 large eggs divided
  • 4 ounces cream cheee softened and cubed
  • 1 cup cheddar cheese shredded
  • 12 slices Texas toast
  • Maple syrup (optional)
  • Powdered sugar (optional)

Instructions

  1. Cook sausage in a large skillet according to package directions; coarsely chop, reserving drippings in skillet.
  2. Lightly beat 8 eggs in a bowl until blended.
  3. Add beaten eggs to hot drippings in skillet and cook over medium heat, without stirring until eggs begin to set on bottom. Cook, stirring constantly, until thickened and set. Remove from heat and stir in cheeses and sausage.
  4. Spoon cooked egg mixture over 6 slices of toast; top with remaining toast, pressing edges to seal.
  5. Lightly beat remaining 4 eggs in a shallow dish; dip sandwiches in beaten egg. Cook sandwiches in a large skillet coated with cooking spray over medium heat until bread is toasted.
  6. Serve with syrup, if desired. Sprinkle with powdered sugar, if on hand.
