Sweet Potato Bars with Streusel Topping

  • 22 Ounces Bob Evans Mashed Sweet Potatoes
  • 2 Large eggs
  • 2/3 Cup buttermilk
  • 1/2 Cup butter melted
  • 1 1/4 Cup brown sugar
  • 2 Cups all purpose flour
  • 2 Teaspoons baking powder
  • 1 Teaspoon salt
  • 1 Teaspoon pumpkin pie spice

For the Streusel Topping:

  • 1/2 Cup brown sugar
  • 1/2 Cup old fashioned oats
  • 1/2 Cup all purpose flour
  • 1/4 Cup butter
  • 1/2 Cup pecans or walnuts chopped


  1. Preheat oven to 350F degrees.
  2. Add sweet potatoes, eggs, buttermilk, melted butter and brown sugar to a large bowl. Mix together until combined.
  3. Add flour, baking powder, salt, and pumpkin pie spice. Stir together until smooth and all combined.
  4. Pour into a greased 2 quart baking dish or 9x13 pan.
  5. In a small bowl, add all streusel ingredients and mix together until a fine crumble. Sprinkle over cake batter.
  6. Bake on center oven rack for 1 hour 15 minutes to 1 hour 20 minutes or until a toothpick inserted comes out mostly clean.
  7. Allow to cool to room temperature before serving.
