Ingredients

  • 2 Tablespoons butter
  • 1 Cup chopped onion
  • ½ Cup diced celery
  • 2 Cloves garlic minced
  • 2 Cups chicken broth
  • 24 Ounces Bob Evans Loaded Mashed Potatoes
  • 1½ Cups milk
  • 1 Cup shredded Cheddar cheese
  • 2 Tablespoons minced fresh chives

Instructions

  1. Melt butter in a Dutch oven over medium heat. Add onions, celery, and garlic.
  2. Cook 5 minutes or until tender. Add broth and potatoes.
  3. Blend soup using an immersion blender or pour into a blender, cover, and process until smooth.
  4. Return soup to pot, and heat soup over medium heat 5 minutes. Stir in milk.
  5. Cook, stirring occasionally, 10 minutes.
  6. Ladle soup into small cups.
  7. Top with shredded cheese and chives.
  8. Enjoy!
