
Loaded Potato Soup Cups
Everything you love about loaded baked potatoes—cheese, bacon, sour cream—served in warm, comforting soup form—perfect for individual servings or party bites.
Ingredients
- 2 Tablespoons butter
- 1 Cup chopped onion
- ½ Cup diced celery
- 2 Cloves garlic minced
- 2 Cups chicken broth
- 24 Ounces Bob Evans Loaded Mashed Potatoes
- 1½ Cups milk
- 1 Cup shredded Cheddar cheese
- 2 Tablespoons minced fresh chives

- Melt butter in a Dutch oven over medium heat. Add onions, celery, and garlic.
- Cook 5 minutes or until tender. Add broth and potatoes.
- Blend soup using an immersion blender or pour into a blender, cover, and process until smooth.
- Return soup to pot, and heat soup over medium heat 5 minutes. Stir in milk.
- Cook, stirring occasionally, 10 minutes.
- Ladle soup into small cups.
- Top with shredded cheese and chives.
