This sweet Latin treat, using our Glazed Apples, is one you just have to make for your family and friends!

Ingredients

  • 1 pkg. Bob Evans Sliced Glazed Apples
  • 2 cups water
  • powdered cinnamon for garnish
  • 1 cup long grain white rice, rinsed
  • 1 4-inch cinnamon stick
  • 1 can low fat evaporated milk (12 ounce)
  • 1 can low fat sweetened condensed milk (14 ounce)
  • 1 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs

Instructions

  1. In a medium pot, combine water, rice and cinnamon stick. Heat over medium heat until boil.
  2. Decrease heat to low, cover and cook for 12 minutes until water is absorbed. Remove from heat.
  3. Remove cinnamon stick. Add evaporated milk, condensed milk, vanilla and salt. Stir to combine.
  4. Scoop out 1 cup of rice with milks and place in a bowl, add eggs and beat with whisk until mixed thoroughly.
  5. Return this mixture to rice pot and stir to combine. Heat for 5 minutes over medium heat, stirring frequently.
  6. Remove from heat and set aside for 5 minutes to cool.
  7. Stir in apples and let mixture thicken and cool to room temperature.
  8. Serve and garnish with powdered cinnamon.
