Ingredients

  • 1 Pound Bob Evans Savory Sage Pork Sausage
  • ½ Cup chopped onion
  • 6 Ounces spinach chopped
  • 8 Ounces block cream cheese softened
  • ¾ Cup crumbled blue cheese
  • 8 Ounces whole mushrooms stems removed

Instructions

  1. Cook sausage and onion in a large skillet over medium heat until sausage is browned and crumbly; drain and return to skillet.
  2. Gradually add spinach to skillet; cook over medium heat until spinach is wilted.
  3. Add cream cheese, stirring until blended.
  4. Stir in blue cheese.
  5. Preheat oven to 400°F.
  6. Spoon sausage mixture into mushroom caps.
  7. Place on a lightly greased rimmed baking sheet.
  8. Bake 15 to 20 minutes or until mushrooms are tender.
