
Mashed Sweet Potato and Apple Bake
A warm and wholesome bake that layers creamy mashed sweet potatoes with tender apples, lightly spiced and oven-roasted to golden perfection. Ideal for fall gatherings or a twist on traditional sides.
Ingredients
- 3 Tablespoons butter
- 3 Honeycrisp apples peeled and chopped
- 1 Cup packed brown sugar
- 2 Teaspoons ground cinnamon
- 20 Ounces Bob Evans Mashed Sweet Potatoes
- ⅓ Cup all purpose flour
- ¼ Cup butter melted
- 1 Cup chopped pecans
- ¾ Cup pomegranate seeds

- Preheat oven to 350°F.
- Melt 3 tablespoons butter in a large skillet over medium heat.
- Add apples, 3 tablespoons brown sugar, and 1 tablespoon cinnamon.
- Cook, stirring occasionally, 10 to 15 minutes or until apples are tender.
- Spread both packages of sweet potatoes in bottom of an 11-x-7 inch baking dish.
- Top with apple mixture.
- Stir together 1 cup brown sugar, flour, and ¼ cup melted butter in a bowl. Stir in pecans.
- Sprinkle streusel over apple mixture.
- Bake 30 to 40 minutes or until hot and bubbly.
- Sprinkle with pomegranate seeds.
