Great for entertaining your friends or a night in with your family, these mini samosas are the perfect twist on a South Asian classic.


  • 1 24 oz. Bob Evans Original Mashed Potatoes
  • 4 pkgs. Prepared Phyllo Shells
  • 1 tbsp. Vegetable Oil
  • 1/2 cup Onion, minced
  • 1 tsp. Ginger, minced
  • 1 cup Frozen Peas
  • 1/4 tsp. Cumin
  • 2 tsp. Yellow Curry Powder
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1/8 tsp. Cayenne Pepper

  1. In a large skillet, heat vegetable oil over medium low heat. Saute together the onions, garlic and ginger until onions are translucent.
  2. Stir peas to onion mixture.
  3. Add cumin, yellow curry powder, salt, black pepper and cayenne. Mix well.
  4. Stir in Bob Evans Original Mashed Potatoes. Warm until heated through.
  5. Carefully spoon about 1 tsp. of mashed potato mixture into prepared phyllo shells.
