  • 1 Tablespoon vegetable oil
  • 1/2 Cup onion minced
  • 1 Teaspoon ginger minced
  • 1 Cup frozen peas
  • 1/4 Teaspoon cumin
  • 2 Teaspoons yellow curry powder
  • 1/2 Teaspoon salt
  • 1/4 Teaspoon black pepper
  • 1/8 Teaspoon cayenne pepper
  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 4 Packages prepared phyllo shells


  1. In a large skillet, heat vegetable oil over medium low heat. Saute together the onions, garlic and ginger until onions are translucent.
  2. Stir peas into onion mixture. Add cumin, yellow curry powder, salt, black pepper and cayenne. Mix well.
  3. Stir in Bob Evans Original Mashed Potatoes. Warm until heated through.
  4. Carefully spoon about 1 teaspoon of mashed potato mixture into prepared phyllo shells.
