Orange Sweet Rolls
Soft and sweet with a citrusy twist, these are sure to brighten your Easter brunch. The heavenly aroma they'll spread about your house is an added perk.
Ingredients
- 4 1/4 Cups all purpose flour divided
 - 0.25 Ounces active dry yeast
 - 1 Cup milk
 - 1 Cup Bob Evans Original Mashed Potatoes
 - 2/3 Cup + 2 Tablespoons butter softened and divided
 - 1 1/3 Cups sugar divided
 - 1 Teaspoon salt
 - 2 Large eggs lightly beaten
 - 3 Tablespoons orange zest divided
 - 4 Ounces cream cheese softened
 - 3 Tablespoons orange juice
 - 2 Cups powdered sugar

- Combine 1½ cups flour and yeast in a large bowl; set aside.
 - Combine milk, mashed potatoes, ⅓ cup butter, ⅓ cup sugar, and salt in a saucepan.
 - Heat over medium-low heat until until warm (120°F to 130°F); add to flour mixture along with eggs. Beat with a mixer on low speed until blended. Beat on medium speed 3 minutes. Gradually add remaining flour, beating until a soft dough forms.
 - Turn out dough onto a lightly floured surface; knead 4 minutes or until dough is smooth and elastic.
 - Place dough in a lightly greased bowl, turning to grease top. Cover loosely, and let stand in a warm place (85°F) for 1 hour or until doubled in size.
 - Meanwhile, stir together 1 cup sugar and 2 Tbsp orange zest in a bowl.
 - Roll out dough into a 8- x 16-inch rectangle on a lightly floured surface. Spread ⅓ cup softened butter over dough; sprinkle with sugar mixture.
 - Roll up dough, starting at one long side, jelly-roll style, pressing edges to seal. Cut into 12 even slices.
 - Place rolls cut sides down in a lightly greased 13- x 9-inch baking pan. Cover loosely, and let stand in a warm place (85°F) for 1 hour or until doubled in size.
 - Preheat oven to 375°F.
 - Bake rolls 25 to 30 minutes or until golden brown.
 - Meanwhile, beat cream cheese and 2 Tbsp butter with a mixer at medium-high speed until fluffy. Beat in 1 Tbsp orange zest and orange juice. Gradually beat in powdered sugar until smooth. Spread over warm rolls.
