
Spinach and Feta Egg Bake
This crowd-pleasing egg bake combines sautéed mushrooms, spinach, and creamy feta in a one-dish wonder. It's a wholesome, protein-packed meal that's great for breakfast or dinner.
Ingredients
- 8 ounces mushrooms sliced
- 1 cup onion chopped
- 5 ounces fresh spinach
- 1 carton Bob Evans 100% Liquid Egg Whites – 16 Ounces
- 4 ounces crumbled feta cheese

- Preheat oven to 375°F.
- Cook mushrooms and onion in a large skillet sprayed with cooking spray over medium heat until mushrooms and onions are tender. Gradually add spinach, stirring until wilted. Season with salt and pepper, if desired.
- Spoon mushroom mixture into a lightly greased 9-inch baking dish. Stir in liquid egg white and cheese.
- Bake 25 to 30 minutes or until center is set. Cut into wedges to serve.
