Tex-Mex Sausage Dip
Everything you love about a good cheese dip, with a southwest spin. Packed with protein and a touch of heat, this hearty dish is a crowd pleaser.
Ingredients
- 16 Ounces Bob Evans Original Roll Pork Sausage
- 3/4 Cup onion finely chopped
- 1 Cup red bell pepper finely chopped, divided
- 16 Ounces cream cheese softened
- 15 Ounces canned pinto beans rinsed and drained
- 8 Ounces sour cream
- 8 Ounces pepper Jack cheese shredded
- 2 Teaspoons ground cumin
- 1/4 Cup black olives sliced
- 1 green onion sliced
- 9.25 Ounces corn chips

- Cook sausage, onion, and 3/4 cup bell pepper in a large skillet over medium heat until sausage is browned and crumbly; drain, and return to skillet. Add cream cheese, beans, sour cream, shredded cheese, and cumin.
- Spoon mixture into a 2-quart baking dish. Bake 25 minutes or until hot and bubbly.
- Top with olives, green onion, and 1/4 cup bell pepper. Serve with corn chips.
