Ingredients

  • 1 Pound Owens Italian Pork Sausage
  • 8 Ounces jambalaya style rice mix
  • 29 Ounces canned stewed tomatoes with onion, celery and green pepper
  • 1 Cup water
  • 1 Cup cooked chicken diced
  • 6 Ounces tomato juice
  • 1/2 Pound raw medium shrimp peeled and de-veined
  • Chopped parsley to serve (optional)
  • Sliced green onions to serve (optional)

Instructions

  1. In large skillet or Dutch oven over medium heat, crumble and cook sausage until browned.
  2. Add rice mix, tomatoes, water, chicken, and tomato juice.
  3. Stir well and bring to a boil. Reduce heat to low, simmer covered for 30 minutes.
  4. Add shrimp; simmer 5 minutes more until shrimp turn pink and opaque.
  5. Garnish with parsley and green onions, if desired. Serve hot. Refrigerate leftovers.
