Ingredients

  • 24 Ounces Bob Evans Original Mashed Potatoes
  • ¼ Cup buttermilk
  • 2 Tbsp vegetable oil
  • 2 Large eggs
  • ½ Cup all purpose flour
  • 1 Tsp baking powder
  • 1 Cup refrigerated white queso dip
  • 10 Slices bacon cooked and crumbled
  • 2 Tbsp thinly sliced chives
  • 1 Cup Ranch dressing

Instructions

  1. Preheat waffle maker according to manufacturer's instructions.
  2. Stir together mashed potatoes, buttermilk, oil, and eggs in a large bowl until blended.
  3. Whisk together flour and baking powder in a small bowl until blended.
  4. Add flour mixture to potato mixture, stirring until blended.
  5. Spoon waffle batter into waffle iron according to manufacturer's instructions.
  6. Cook until browned and crisp.
  7. Cut into ½-inch-thick "fries" and arrange on a serving platter.
  8. Heat queso dip according to package directions; spoon over "fries".
  9. Top with crumbled bacon and chives.
  10. Serve with Ranch dressing, for dipping.
