Ingredients

  • 12 Ounces gnocchi
  • ¼ Cup butter, melted
  • 16 Ounces Bob Evans Original Roll Pork Sausage
  • 10 Ounces frozen chopped onions
  • 24 Ounces marinara sauce
  • 1 Cup chicken broth
  • 10 Ounces baby spinach
  • 8 Ounces sliced fresh mozzarella cheese

Instructions

  1. Preheat oven to 425°F.
  2. Toss together gnocchi and melted butter on a large rimmed baking sheet; bake 15 minutes or until gnocchi is toasted.
  3. Meanwhile, cook sausage and onions in a large skillet over medium heat until sausage is browned and crumbly; drain, and return to skillet.
  4. Add marinara sauce and broth; bring to a boil, reduce heat, and simmer 5 minutes.
  5. Gradually stir in spinach until wilted.
  6. Stir in gnocchi. Top with cheese. Cover and cook until cheese is melted.
