  • 1/4 Cup butter
  • 1 Cup onion diced
  • 2 Cloves garlic minced
  • 1/4 Cup all purpose flour
  • 1 Cup chicken broth
  • 1 Cup milk
  • 4 Ounces cream cheese softened
  • 1 Cup mozzarella cheese shredded
  • 1 Cup Havarti cheese shredded
  • 1/2 Cup parmesan cheese shredded
  • 40 Ounces Simply Potatoes Diced Potatoes


  1. Preheat oven to 350°F.
  2. Melt butter in a large Dutch oven over medium heat. Add onion and garlic; cook, stirring frequently, until onion is tender.
  3. Add flour; cook, stirring constantly, 2 minutes.
  4. Gradually stir in broth and milk; cook until mixture is thickened and bubbly.
  5. Reduce heat, and gradually stir in cheeses until melted.
  6. Stir in potatoes until blended. Season with salt and pepper, if desired.
  7. Spoon mixture into a lighly greased 2½-quart baking dish. Bake 40 to 45 minutes or until potatoes are tender and casserole is hot and bubbly.
